In Europe to be classified as certified organic you may not exceed 100 ppm. Rischio Reale does not exceed 80 ppm. This is a big difference from 90 % of wines being sold today in most retail stores and served in restaurants. When it comes to consuming wine it is no different than food. One must pay attention to how they feel. If something is not sitting well after consumption your body will immediately let you know.

Winemakers use sulfites to slow the oxidization process and maintain the wines freshness. In fact, a small percentage of sulfites also help prevent bacterial growth thanks to their antimicrobial properties. All wines have a level of sulfites as the grapes produce this naturally on their own to protect and preserve its skin.  However, the issue becomes apparent when the winemaker uses too much to preserve the wine for extended periods of time. Having your wine classified as being certified organic most certainly requires a great deal more craftsmanship and hard work.
